Simple WFPB Pad Thai

Ingredients:

One package rice noodles

Little olive oil

16 ounce block of tofu

4 T soy sauce

2 T rice vinegar

2 T lime juice

4 T maple syrup

1 T sriracha hot sauce

1 C julienne sliced carrots

3 green onions (chopped)

2 limes (wedged)

1/2 C cilantro

1/2 C peanuts

beans sprouts (optional)

Directions:

Press your tofu and then cut it into cubes. Cook the noodles. Make the sauce: Stir soy, vinegar, maple syrup, lime and hot sauce in a bowl. Air fry or pan fry the tofu until brown. In a pan, add the tofu, noodles, sauce, carrots, onions, and half of the cilantro. Stir as it warms up.

Seerve immediately with peanuts, cilantro and (maybe) sprouts on top and lime wedge on side. Squeeze lime on top and enjoy!
