Tortilla Bean Casserole

Inspired by T Colin Campbell! Perfect for a crowd or when you want great leftovers for the week.

Ingredients:

Corn tortillas

2 C kidney or black beans

3 shredded carrots

1 tomato

1 C tomato sauce

2 T minced garlic

salt (to taste)

1 T smoked paprika

1/2 T chili powder

Jalapeno - sliced thin (optional)

1/3 C plant based cheese (optional)

Salsa (to taste)

Directions:

Preheat oven to 350.

Sautee onions, garlic, and carrots over medium heat until carrots are soft; use a little water if needed.

Add beans, tomato, tomato sauce, salt, jalapeno, and chili powder. Cook over low heat for 5 minutes, until somewhat thickened. Set aside.
