Fresh Lemon Energy Balls

Ingredients:

1 C Almonds or cashews

1 C Pitted Medjool dates

1/2 C unsweetened, shredded coconut (plus more for sprinkling)

1 T Maple syrup 

2 T Lemon juice 

1/2 t Vanilla extract 

1/2 t Sea salt 

1 T Grated lemon zest (plus more for sprinkling)

Directions:

Plus almonds in a food processor until crumbly.  Add dates, coconut, maple syrup, lemon juice, vanilla and salt.  Process until well combined.  Add lemon zest and pulse until ingredients are incorporated.  About 30 seconds.  If mixture is too sticky to handle, freeze until firm enough to roll (@15-20 minutes).  Use a small spoon to scoop out mixture.  With slightly wet hands, roll into one inch balls.  Mix additional coconut and lemon zest together in a small bowl.  Sprinkle each energy ball with the mixture and place on a baking sheet.  Refrigerate for at least one hour before serving.  Store in an airtight container in the refrigerator for up to three days, or freeze for up to one month.
