Scrambled Turmeric Tofu with Veggies

1 15 ounce block of extra firm tofu

2-3 T nutritional yeast

2 t turmeric

1 t smoked paprika

pinch of black pepper and salt

2 T almond milk

1 T olive oil

2 cloves garlic

2 C mushrooms

2 C greens (spinach, kale, etc)

1 C broccoli

1 finely chopped jalapeno

1/4 sun-dried tomatoes

Sliced avocado

Directions:

Press Tofu to reduce moisture.

Place tofu in a bowl and break up with a fork. Mix in nutritional yeast, turmeric, smoked paprika, salt, pepper and milk.

Heat oil and cook mushrooms, garlic, broccoli for @ 5 minutes. Add tofu, greens, and sun-dried tomatoes and cook until greens are wilting. Serve immediately with avocado on top.
