Potluck Broccoli Salad

Ingredients:

1 1/2 C Cashews, soaked

1/2 C. Water

4 T Maple Syrup

4 T Apple Cider Vinegar 

1 t Minced garlic 

1 t Sea Salt

Ground pepper

4 Broccoli crowns

3 C red grapes, halved

2/3 C Salted almonds, finely chopped

1 1/2 C Diced red onion

2/3 C Dried cranberries

Instructions

Place cashews in a bowl.  Cover with water and soak for two hours or overnight.  If you have a vitamix, you can soak for 10 minutes in hot water.  

Drain cashews.  Add to the blender with the rest of the dressing ingredients.  Blend until completely smooth and creamy.

Place broccoli, grapes, almonds, red onion, and dried cranberries in a medium or large mixing bowl.  Add dressing and toss throughly to coat.   Season with salt and pepper to taste.

Serve chilled.
