Red Lentil Soup 

Whether is it soup weather or not, this dish is amazing! Lentils are so good for you and so easy to make. This is my favorite lentil soup. Make double and freeze for a future “easy button” day:).

Inspired by Forks over Knives

Ingredients:

1 C Red Lentil, dry

1/4 C Brown Rice

1 C Corn

2 t Vegetable Bouillon

1 t Smoked Paprika 

Cayenne Pepper (to taste)

Hot Sauce (to taste)

Sea Salt (to taste)

Fresh Cilantro & ripe avocado

Instructions

Bring 5 cups of water to a boil in a medium soup pot and add the rice, lentils, corn, bouillon, smoked paprika, cayenne and sea salt.

Cook over a medium-low flame for 50-60 minutes, semi-covered.

Taste for any seasonings adjustments and serve with cilantro, avocado cubes, and 2 slices of toast.
